Ingredients

  • 6 pork chops 1 inch thick (bone-in or boneless, room temperature)
  • 2 tablespoons olive oil for brushing the chops
  • 3 tablespoons brown sugar light or dark, packed
  • 3 tablespoons paprika smoked or sweet, depending on preference
  • 2 teaspoons garlic powder or granulated garlic
  • 2 teaspoons onion powder or finely powdered dried onion
  • teaspoon ground cayenne pepper optional for heat
  • ½ teaspoon ground cloves freshly ground if possible
  • 2 teaspoons salt kosher or sea salt
  • 1 teaspoon black pepper freshly ground

Instructions

  • Combine brown sugar, paprika, garlic powder, onion powder, cayenne, cloves, salt, and black pepper in a small bowl.
  • Pat pork chops dry with paper towels to remove excess moisture.
  • Place pork chops on a tray and lightly brush half of the olive oil on both sides.

  • Evenly coat one side of the pork chops with half of the prepared spice rub.

  • Flip the pork chops, brush with remaining olive oil, and sprinkle the remaining spice rub on top.
  • Preheat a clean grill to medium-high heat (around 400°F / 204°C).
  • Grill the pork chops with the lid closed for 4–5 minutes per side, or until the internal temperature reaches 140°F (60°C).

  • Remove the pork chops from the grill and let them rest for at least 5 minutes before serving.
