Ingredients

  • 1 lb Ground beef - 90/10 preferred
  • 1 lb Ground pork
  • 1 Yellow onion - Finely diced
  • 1 Green bell pepper - Finely diced
  • 1 cup Ritz crackers - Crushed (or use GF alternative)
  • 2 Eggs
  • ½ cup Milk - Whole milk works best
  • 1 cup Sharp cheddar cheese - Shredded
  • 1 tablespoon Maple syrup - Optional but recommended

For the Glaze:

  • ½ cup Ketchup
  • ¼ cup Brown sugar - Packed
  • 1 tablespoon Yellow mustard
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon Garlic powder

Instructions

  • Chop onion and bell pepper; sauté until soft; let cool
  • Preheat oven and prep loaf pan
  • Mix beef, pork, eggs, milk, crackers, cheddar, and extras
  • Add sautéed veggies to meat mixture and combine gently
  • Form loaf and transfer to pan
  • Mix glaze and apply first half; bake 45 minutes
  • Apply remaining glaze; bake 15–20 more minutes
  • Let meatloaf rest before slicing
