  • 1 Medium saucepan (Thick bottom for cranberry sauce)
  • 1 Sharp carving knife (For slicing turkey cleanly)
  • 1 Cutting board (Preferably with juice groove)

Ingredients

  • 1 whole Turkey breast - bone-in or boneless
  • 2 tablespoon Fresh thyme - chopped
  • 3 cloves Garlic - minced
  • 4 tablespoon tbsp Butter - softened
  • 2 teaspoon Sea salt - to taste
  • 1 teaspoon Black pepper - freshly ground
  • 2 tablespoon Olive oil

Cranberry Magic

  • 12 oz Fresh cranberries - rinsed
  • 1 cup Orange juice - pure not from concentrate
  • 1 tablespoon Orange zest - add at end
  • ½ cup Honey - can sub maple syrup
  • 1 tablespoon Fresh ginger - grated
  • 1 sprig Rosemary - whole remove before serving
  • ¼ teaspoon Cinnamon - ground

Optional Enhancers

  • 2 tablespoon Maple syrup - extra sweetness
  • 1 tablespoon Fresh sage - chopped
  • 2 Shallots - minced
  • ¼ cup White wine - dry
  • 2 Bay leaves - remove before serving

Instructions

  • Remove turkey from fridge 45 minutes before cooking. Pat dry with paper towels. Rub softened butter under skin, season generously inside and out, then let rest while sauce is prepared.

  • Rinse cranberries, discarding soft ones. In a saucepan, combine orange juice and honey. Add ginger and rosemary; bring to simmer. Add cranberries and cook 8–10 minutes until they pop. Stir in orange zest during last minute. Remove herbs before serving.

  • Preheat oven to 425°F (220°C). Place turkey breast-side up in roasting pan. Roast 20 minutes, then reduce to 350°F (175°C). After 45 minutes, begin basting with cranberry sauce every 20 minutes until internal temperature reaches 165°F.

  • Remove turkey from oven and rest for 15 minutes before carving. Slice and serve with cranberry sauce.
