Ingredients

  • 3 hard-boiled eggs peeled and diced
  • 2 large tomatoes seeded and chopped, about 4 cups or 720g
  • 2 green onions sliced
  • ¼ teaspoon salt adjust to taste
  • ¼ teaspoon freshly cracked black pepper adjust to taste
  • 1 cup mayonnaise use more or less depending on desired creaminess
  • 1 sleeve saltine crackers about 40 crackers, crushed

Instructions

  • Boil the eggs and allow them to cool before peeling and dicing them.
  • Seed and chop the tomatoes into bite-sized pieces.
