Ingredients

  • 2 Large eggs - Add one at a time
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder

Mascarpone Filling

  • 8 oz Mascarpone cheese - Softened
  • 1 cup Powdered sugar - Sifted
  • ½ cup Heavy cream whipped
  • 1–2 tablespoon Dark rum - Optional
  • 1 teaspoon Pure vanilla extract

Finishing Touches

  • 2 tablespoon Dark chocolate shavings
  • 2 tablespoon Unsweetened cocoa powder - For dusting
  • few Coffee beans - Garnish

Instructions

  • Chill the prepared cookie dough in the refrigerator before baking.
