  • 1 cup Butter - Room temperature
  • cup Sugar - White or swap brown
  • 1 large Egg yolk - or whole egg less tender
  • 1 teaspoon Vanilla extract - or almond extract ½ tsp
  • ¼ teaspoon Salt - —
  • ½ cup Jam/Jelly - Any flavor; ~½ teaspoon per cookie
  • Optional coatings - Chopped nuts sprinkles, sugar
  • Optional fillings - Nutella lemon curd, caramel

Instructions

  • Preheat oven to 375°F and line baking sheets with parchment paper.

  • Beat butter and sugar, add egg yolk and vanilla, then gently mix in flour and salt.

  • Roll dough into balls, place on sheets, and press thumb into the center of each.
