Ingredients

  • 2 cups All-purpose flour - plus 2 tablespoon for tossing berries
  • 1 ½ cups Fresh strawberries - diced or frozen, unthawed
  • 1 cup Granulated sugar
  • 2 tablespoon Brown sugar - for flavor depth
  • 2 large Eggs - room temperature
  • ½ cup Unsalted butter - softened
  • ½ cup Whole milk
  • ½ cup Sour cream - or Greek yogurt
  • 1 teaspoon Pure vanilla extract
  • 1 teaspoon Lemon zest - optional
  • 2 teaspoon Baking powder
  • ½ teaspoon Fine sea salt

Instructions

  • Preheat oven to 350°F (175°C). Butter and flour a 9x5 loaf pan. Hull and dice strawberries, toss with 2 tablespoon flour.
    Strawberry preparation: Loaf pan filled with diced strawberries coated in flour, with a bowl of fresh strawberries and extra flour nearby.
  • Cream butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract and lemon zest.
    Mixing the base batter: Large bowl with creamed butter and sugar mixture surrounded by flour, eggs, and a bowl of milk on the counter.
  • Whisk flour, baking powder, and salt. Add dry mixture alternately with milk to the butter mixture. Fold in sour cream gently.
    Loaf in pan before slicing: Strawberry bread in a loaf pan, studded with red strawberry halves and drizzled with white glaze.
  • Gently fold in floured strawberries. Pour batter into prepared loaf pan.
  • Bake 55–65 minutes, until a toothpick shows moist crumbs. Cool 10 minutes in pan, then transfer to wire rack to cool completely.
    Finished loaf with glaze: Baked strawberry bread, sliced to show the moist interior, topped with fresh strawberries and a shiny glaze.
