Ingredients

  • 2 lbs Ground chicken
  • 1 cup Parmesan cheese - freshly grated
  • 1 cup Panko breadcrumbs - soaked in milk
  • 2 large Eggs
  • 1 medium Yellow onion - finely diced
  • 3 cloves Garlic - minced
  • ¼ cup Fresh parsley - chopped
  • ½ cup Whole milk
  • 2 teaspoon Italian seasoning
  • 1 teaspoon Garlic powder
  • 1 teaspoon Sea salt
  • ½ teaspoon Black pepper
  • 1 tablespoon Olive oil
  • ¼ cup Parmesan - for topping
  • 2 tablespoon Butter - dotted on top
  • w2 tablespoon Fresh herbs - topping

Instructions

  • Preheat oven, grate Parmesan, and prepare all ingredients
    Chicken and breadcrumb mixture – Mixing bowl filled with chicken chunks and breadcrumbs being stirred with a wooden spoon.
  • Combine eggs, milk-soaked breadcrumbs, onion, garlic, and Parmesan
    Seasoning mixture in bowl with lemon – Small bowl of oil, garlic, and spices with a wooden spoon and a lemon half beside it.
  • Gently fold ground chicken into mixture without overmixing
    Unbaked meatloaf topped with cheese and butter – Raw meatloaf in a loaf pan, covered with shredded Parmesan and dotted with cubes of butter.
  • Form into loaf, place in pan, and add toppings
    Baked glazed meatloaf with onions – Freshly baked meatloaf topped with tomato glaze and roasted onion slices in a pan.
  • Bake until golden, rest, then slice and serve warm
