Ingredients

  • 24 asparagus spears medium thickness, trimmed
  • 1 tablespoon extra virgin olive oil for coating
  • Salt to taste
  • Black pepper freshly ground, to taste
  • 1 sheet puff pastry pre-rolled, chilled, rectangular
  • 1 small to medium egg beaten, for egg wash
  • ½ cup Parmesan cheese grated, can substitute Grana Padano or Pecorino

Instructions

  • Rinse the asparagus under cold running water and trim off the tough ends (about 2 inches).
  • Place the asparagus in a wide bowl, drizzle with olive oil, and season with salt and black pepper. Toss to coat evenly.

  • Unroll the puff pastry sheet and cut into strips about ½ inch wide (length should roughly match asparagus spears).
  • Wrap each asparagus spear with a pastry strip, leaving the tip exposed and spacing the pastry slightly apart.
  • Place the wrapped asparagus on a parchment-lined baking sheet. Repeat with remaining spears.
  • Brush the pastry sections with the beaten egg and sprinkle evenly with Parmesan cheese.

  • Bake in a preheated oven at 400°F (200°C) for 10 minutes or until the pastry is puffed and golden brown.
