Instructions

  • Blot the salmon fillets dry with paper towels, then season both sides evenly with salt and pepper.

  • Warm the olive oil in a large skillet over medium heat until it shimmers slightly.
  • Lay the salmon in the pan skin-side down and cook until lightly golden, then flip and cook briefly on the second side before transferring to a plate.
