  • 2 tablespoon olive oil - for roasting
  • Salt & pepper - to taste
  • 4 tablespoon butter - softened
  • ¼ cup milk or cream - add more as needed
  • 2 cloves garlic - roasted
  • Salt & pepper - to taste
  • 2 tablespoon chives - chopped

  • 2 tablespoon cream cheese - extra richness
  • ¼ cup parmesan cheese - savory depth
  • 2 tablespoon fresh herbs - thyme parsley, etc.
  • 1 teaspoon garlic powder - stronger garlic flavor

Instructions

  • Preheat oven and roast squash until completely tender and soft

  • Scoop out the cooked squash flesh into a large mixing bowl carefully
  • Mash the squash with butter and milk or cream until smooth and creamy
