Ingredients

  • 2 cups brown lentils rinsed and drained
  • 1 large yellow potato peeled and diced
  • 1 medium red onion peeled and roughly chopped
  • 1 medium carrot peeled and chopped
  • cups vegetable broth enough to cover vegetables
  • 1 cup breadcrumbs gluten-free if preferred
  • 1 cup fresh parsley chopped
  • 1 teaspoon garlic powder or 2 cloves minced garlic
  • 1 teaspoon smoked paprika for warmth and color
  • 1 teaspoon salt or to taste
  • 2 tablespoon avocado oil or olive oil
  • Sub bread for serving, optional
  • Tomatoes sliced, for serving
  • Lettuce leaves for serving
  • Red onion slices for serving

Instructions

  • Place the lentils, potato, onion, and carrot in a large pan. Pour in vegetable broth until ingredients are covered by about an inch. Cover and bring to a boil, then reduce to a simmer for 40 minutes, adding extra water if needed, until lentils are soft and potato is mashable.

  • Transfer the cooked mixture to a mixing bowl. Use a potato masher to mash until it reaches a thick, slightly chunky texture, similar to oatmeal.
  • Preheat your oven to 400°F (or air fryer to 400°F). Line a sheet pan with parchment paper.
  • Add the breadcrumbs, parsley, garlic powder, paprika, salt, and oil to the mashed mixture. Mix thoroughly using clean hands until evenly combined.

  • Shape the mixture into 20 oval patties, roughly half the size of your palm, similar to flattened falafel balls.

  • Place patties on the prepared sheet pan and lightly spray or brush with oil. Bake in the oven for 15 minutes or air fry for 12–13 minutes, flipping halfway through, until golden and slightly crisp on the outside.
  • Serve warm on sub bread or wraps with tomatoes, lettuce, and red onion as desired.
