Ingredients

  • 1 cup 120 g All-purpose flour - Can use GF blend
  • 1 cup 200 g Granulated sugar - Or coconut sugar
  • 2 Large eggs - Room temp
  • ½ cup 113 g Unsalted butter - Melted, cooled
  • 2 tablespoon Fresh lemon juice - About 1 lemon
  • 2 tablespoon Lemon zest - About 2 lemons
  • 1 teaspoon Vanilla extract - Pure
  • ½ teaspoon Baking powder - Fresh
  • ¼ teaspoon Salt - Fine grain

Ingredients Optional Glaze

  • 1 cup 120 g Powdered sugar - Sifted
  • 1 tablespoon Lemon juice - Fresh
  • 1 tsp Lemon zest - Extra flavor

Instructions

  • Preheat oven, line the pan with parchment, zest and juice lemons, and melt butter

  • Whisk melted butter with sugar, add eggs one at a time, then stir in lemon juice, zest, and vanilla

  • Fold in flour, baking powder, and salt until just combined, being careful not to overmix
