Ingredients

  • 8 sheets graham crackers slightly sweet, plain if unavailable locally
  • ½ cup dark chocolate chips vegan, melted
  • 255 grams coconut whipped cream cocowhip or similar plant-based whipped cream
  • 1 scoop vanilla protein powder plant-based, preferably soy for smooth texture

Instructions

  • Lay 4 graham cracker sheets side by side on a lined sheet pan or freezer-safe container.
  • Spread the melted chocolate evenly over the top of the graham crackers.
    Chocolate layer smooth on the cracker before adding marshmallow.
  • In a mixing bowl, combine the coconut whipped cream with the vanilla protein powder until smooth.
    Fluffy and white, ready to assemble into s’mores.
  • Evenly spread the protein-coconut mixture over the chocolate-covered graham crackers.
    The marshmallow is toasted on top and chocolate melted underneath.
  • Place the remaining 4 graham cracker sheets on top to form sandwiches.
  • Freeze the s’mores for 4 hours for a soft, marshmallow-like texture, or overnight for a firmer, ice cream-like consistency.
    Each s’more has graham crackers, melted chocolate, and marshmallow, slightly oozing at the edges.
