Ingredients

  • 450 g White fish fillets - Cut into 2-inch pieces
  • 2 tablespoon Butter - For sautéing vegetables
  • 1 Yellow onion - Diced
  • 2 Carrots - Diced
  • 2 Celery stalks - Diced
  • 3 Garlic cloves -Minced
  • 2 Bay leaves - Whole
  • 4 cups Fish stock or vegetable broth - Base liquid
  • 120 ml White wine - Or extra broth + lemon juice
  • 120 ml Heavy cream - Or milk / coconut milk / cashew cream
  • 1 tablespoon Fresh dill - Chopped
  • 1 tablespoon Fresh parsley - Optional chopped
  • Salt - To taste
  • White pepper - To taste

Instructions

  • Dice onion, carrots, and celery. Mince garlic cloves. Chop dill and parsley. Cut fish into bite-sized pieces.

  • Melt butter in a large pot. Sauté onion, carrot, and celery until softened, then add garlic for the last minute.

  • Pour in broth and wine. Add bay leaves and bring to a gentle simmer.
