Ingredients

  • 1.5–2 lbs Chicken breasts or thighs - Boneless, skinless

  • 8 oz Baby bella mushrooms - Sliced ¼" thick
  • 3 cloves Garlic - Minced
  • 1 small Yellow onion - Diced
  • 1 teaspoon Fresh thyme - Or ½ teaspoon dried
  • 1 cup Heavy cream - Or see substitutions
  • 0.5 cup Chicken broth - Low-sodium preferred
  • 2 tablespoon Butter - For searing and flavor
  • 1 tablespoon Olive oil - Or neutral oil

Optional Flavor Boosters:

  • 0.25 cup White wine - For deglazing
  • 1 tablespoon Fresh parsley - Chopped, for garnish
  • 2 tablespoon Parmesan cheese - For extra richness
  • Pinch Red pepper flakes - For heat, optional

Instructions

  • chicken dry and season both sides with salt, pepper, and garlic powder.
  • Heat skillet with butter and oil over medium-high. Sear chicken undisturbed until golden-brown edges form; flip and cook until done. Remove and rest.
  • In the same skillet, add mushrooms. Let them release moisture and caramelize before stirring.

  • Add diced onion and cook until softened. Add garlic for the last minute, stirring constantly.
  • Pour in chicken broth (or wine). Scrape the pan and let the liquid reduce by half. Stir in thyme.
