Instructions
chicken dry and season both sides with salt, pepper, and garlic powder.
Heat skillet with butter and oil over medium-high. Sear chicken undisturbed until golden-brown edges form; flip and cook until done. Remove and rest.
In the same skillet, add mushrooms. Let them release moisture and caramelize before stirring.
Add diced onion and cook until softened. Add garlic for the last minute, stirring constantly.
Pour in chicken broth (or wine). Scrape the pan and let the liquid reduce by half. Stir in thyme.
Pour in heavy cream and stir to combine. Return chicken to the pan.
Let chicken finish cooking in sauce until fully cooked and sauce thickens. Adjust seasoning and garnish.
