Ingredients

  • 3 cups Cooked chicken shredded - Use rotisserie or poached chicken
  • ½ cup Mayonnaise - Add more to taste
  • 1 cup Celery - chopped
  • 1 cup Red grapes halved - Or substitute dried cranberries
  • 1 tablespoon Fresh lemon juice - About half a lemon
  • ½ teaspoon Salt - Adjust to taste
  • ¼ teaspoon Black pepper - Freshly ground
  • optional Chopped nuts Pecans - walnuts, or almonds
  • optional Green onions - Thinly sliced
  • optional Fresh dill or parsley - Chopped

Instructions

  • Shred cooked chicken; wash and chop celery; halve grapes; chop nuts/herbs if using.

  • In a bowl, combine chicken, ½ cup mayo, celery, grapes, lemon juice, salt, and pepper; stir gently.
