Ingredients

Flour tortillas
- Swap with corn whole wheat, or low-carb tortillas

Shredded cheese blend
- Monterey Jack + Cheddar or Oaxaca, or Mozzarella

Butter
- Spread on tortillas or sub olive oil/cooking spray
Instructions
Heat skillet over medium heat
Spread butter on one side of each tortilla
Place tortilla butter-side down in skillet. Sprinkle cheese on half. Fold tortilla over cheese.
Cook 2–3 minutes until golden, then flip with spatula. Cook another 2–3 minutes until browned.
Remove from skillet, let rest 1 minute, then cut into triangles and serve.
