Ingredients

  • 4 large Flour tortillas - Swap with corn whole wheat, or low-carb tortillas
  • 2 cups Shredded cheese blend - Monterey Jack + Cheddar or Oaxaca, or Mozzarella
  • 2 tablespoon Butter - Spread on tortillas or sub olive oil/cooking spray

Instructions

  • Heat skillet over medium heat

  • Spread butter on one side of each tortilla
    A toasted tortilla in a cast iron skillet topped with a generous amount of shredded cheese.
  • Place tortilla butter-side down in skillet. Sprinkle cheese on half. Fold tortilla over cheese.

  • Cook 2–3 minutes until golden, then flip with spatula. Cook another 2–3 minutes until browned.
