Instructions
Chop all vegetables and open canned goods. Have spices and broth ready.
Heat oil in a large pot over medium heat. Add onions and cook for 5 minutes until softened. Stir in garlic and cook for another minute.
Add carrots, celery, and bell peppers. Sauté for another 5 minutes.
Pour in broth and canned tomatoes. Add bay leaves, Italian seasoning, paprika, salt, pepper, and red pepper flakes (if using). Bring to a boil.
Reduce heat and simmer for 10–15 minutes. Then stir in the chopped cabbage and cook for another 20 minutes, until tender but not mushy.
