Ingredients

  • 2 lbs Beef shank with bone marrow - Main flavor rich marrow broth
  • 1 lb Beef short ribs - Adds meatiness and body
  • 1 whole White onion - Halved for broth base
  • 3 in Fresh ginger - Sliced thick
  • 1 tablespoon Whole peppercorns - Adds spice and depth
  • 4 cloves Garlic - Crushed
  • 2 leaves Bay leaves - Aromatic enhancer
  • 1 tablespoon Sea salt - Adjust later
  • 3 tablespoon Fish sauce - Seasoning to taste
  • 2 whole Fresh corn on cob - Cut into chunks
  • ½ head Napa cabbage or pechay - Roughly chopped
  • 4 small Potatoes - Halved
  • 1 cup Green beans - Trimmed
  • 1 bunch Bok choy - Added last
  • 2 stalks Scallions - For garnish
  • 2 tablespoon Coconut vinegar - Optional add last 30 min for brightness

Instructions

  • Rinse beef, cut vegetables, slice ginger, prep aromatics

  • Add bones to pot, boil, skim foam, add aromatics
