Ingredients

For the Chicken Base

  • 3 tablespoon butter
  • 1 medium onion - diced
  • 2 carrots - diced
  • 2 stalks celery - diced
  • 3 cloves garlic - minced
  • 6 cups chicken broth - use 4 cups if using cream of chicken variation
  • 3 cups cooked chicken - shredded
  • 1 cup frozen peas - optional
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • salt & pepper - to taste

For the Bisquick Dumplings

  • 2 cups Bisquick mix
  • cup milk
  • 2 tablespoon fresh parsley - chopped optional

Cream of Chicken Soup Variation

  • 1 can cream of chicken soup - replaces 2 cups broth + add 1 cup broth

  • 2 cups frozen mixed vegetables - replaces fresh vegetables

Instructions

  • Melt butter in a large pot or Dutch oven over medium heat. Add onions, carrots, and celery; cook 5–7 minutes until softened. Add garlic and cook 1 minute more.

  • Add chicken broth, shredded chicken, peas, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce to a simmer.
  • In a separate bowl, combine Bisquick and milk just until mixed; lumps are fine. Fold in parsley if using.
