Ingredients

For the Beef:

  • 1.5 lb Beef tenderloin or filet mignon - Cut into 1-inch cubes
  • 2 tablespoon Vegetable oil - For searing beef
  • To taste Salt - Season beef
  • To taste Pepper - Season beef
  • 2 tablespoon Dijon mustard - Brush on seared beef

For the Mushroom Duxelles:

  • 1 lb Mushrooms - Finely chopped or processed to paste
  • 2 tablespoon Butter - For cooking duxelles
  • 2 Shallots - Minced
  • 3 cloves Garlic - Minced
  • 2 tablespoon Fresh thyme leaves - Optional
  • ¼ cup Dry sherry or white wine - For deglazing
  • To taste Salt - Season duxelles
  • To taste Pepper - Season duxelles

For Assembly:

  • 2 packages 17 oz each Puff pastry - Thawed
  • 8 slices Prosciutto - Cut into smaller pieces
  • 1 Egg - Beaten for egg wash
  • To taste Flaky sea salt - Optional for topping

For Serving:

  • As desired Red wine reduction - Optional
  • As desired Horseradish sauce - Optional
  • As desired Dijon mustard - Optional

Instructions

  • Slowly cook mushrooms until dry, dark, and richly flavored.

  • Brown beef cubes lightly to develop flavor without cooking through.
