Ingredients

  • 1 block Feta cheese - Use high-quality Greek-style
  • 4–6 Cherry tomatoes - Halved if large
  • 2–3 Eggs - Fresh large
  • 1–2 tablespoon Olive oil - Extra virgin
  • to taste Fresh herbs - Thyme oregano, parsley
  • to taste Red pepper flakes - Optional for heat
  • to taste Black pepper - Freshly cracked
  • Optional veggies - Spinach bell peppers, olives

Instructions

  • Begin by heating the oven properly.
    Block of feta cheese placed on roasted cherry tomatoes, seasoned with herbs and red pepper flakes in a cast iron pan.
  • Place all base ingredients into skillet evenly.
  • Soften feta and roast the tomatoes slightly.
